August in the Garden from From My Carolina Home

Hot days gave way this week to milder temps, which certainly felt better to me. I usually just suffer through August, watching old classic football games to distract me from the heat and looking forward to September. I’m excited about the fair, and a few other things planned for that month. On the veranda, I got three toad lilies from Bullington Gardens, and eagerly await some blooms in September too.

In the garden planter, a pie pumpkin is growing behind some large leaves, suspended off the ground. It is getting close to being ripe enough to pick.

Cheesy Baked Acorn Squash from From My Carolina Home

Don’t you love fall squash? Acorn and butternut squash are perfect side dishes for autumn and winter to me. This recipe could easily be a meatless main course, too. These are such versatile vegetables, and can go sweet or savory. My Sweet Babboo is sweet enough, so he prefers savory versions. He saves the sweet for pumpkin bread. Acorn Squash for a Fresh Side Dish from From My Carolina Home

I have one more new recipe for you for an easy side dish that will freshen up the turkey or ham leftover dinners.  It is nice enough for a special meal, like Christmas eve, but easy enough for a Tuesday night meal too.  Acorn squash is easy to cook and has a fresh squash flavor, mild yet not sweet like a butternut.
